STRAIN THE GARLIC AND HERBS FROM THE OIL AND SET BOTH THE INFUSED OIL AND THE GARLIC AND HERBS ASIDE. LAY THE BREAD IN A ROASTING TRAY AND DRIZZLE WITH THE INFUSED OIL. ROAST FOR 25 MINTUES, TURNING THE CROUTONS HALFWAY THROUGH, UNTIL GOLDEN ON THE OUTSIDE.HEAT A GRIDDLE PAN UNTIL SMOKING AND COOK THE CHICKEN ON EACH SIDE UNTIL LIGHTLY CHARRED. RETURN THE CHICKEN TO THE ROASTING TRAY AND COOK IN THE OVEN FOR 25 MINUTES, OR UNTIL THE JUICES IN THE LEGS RUN CLEAR. CHOP THE CHICKEN THROUGH IT JOINTS INTO 10 PIECES.BLANCH THE KALE AND REFRESH IT IN COLD WATER TO STOP IT COOKING. PLACE THE LEAVES ON A PLATTER AND POUR THE OTHER HALF OF THE DRESSING OVER THE LEAVES. CUT THE BOILED EGGS IN A HALF AND PLACE ON TOP ALONG WITH ANCHOVIES, PARMESAN SHAVINGS AND RESERVED CRISPY ROSEMARY SPRIGS AND CROUTONS. SERVE ALONGSIDE THE GRIDDLED CHICKEN WTH THE CHICKEN JUICES POURED OVER.FOR THE LIGHT CAEASER DRESSING:PUT THE EGG YOLK, ANCHOVIES, MUSTARD, VINEGAR, PARMESAN AND GARLIC CLOVES IN A FOOD PROCESSOR AND BLEND UNTIL SMOOT.   • Greek Live Yoghurt - Kitchen Essentials | Wild Dish

    Laoise Casey shows you how to make a delicious, but simple Greek Yoghurt.Ingredients1 litre whole milk85g live Greek yoghurtEquipmentSaucepanThermometerWhiskContainerJ-cloth or muslinElastic band or stringTea towlMethodMake sure all your equipment is very clean before you start. Heat the milk to 80C.Heat the milk to 80C. Allow to cool to 46C.Whisk in the live yoghurt. Pour into the container, cover with a j-cloth or muslin and wrap in a tea towel to keep it warm.Leave in a warm place for 8 – 12 hours depending on how thick and tangy you want your finished yoghurt to be.Refrigerate when ready – I like to then hang it overnight for a thicker yoghurt (like Greek yoghurt)For your next batch just use some of your homemade yoghurt as your starter. Store in the refrigerator for up to 2 weeks.Store in a sterilised jar: To sterilise jars wash well with hot soapy water and rinse or run through the dishwasher.Place in a pre-heated oven at 115C for 20 minutes to dry them out. Sterilise lids by placing them in boiling water for 1 minute.Top tipsFor extra creamy yoghurt add a teaspoon of milk powder to the milk when heating it. For a low fat version you can use skimmed milk but it will make a thinner yoghurt. If you hang the yoghurt you can use the liquid that drains off, the whey, to make smoothies and sauces, drink it, or try using as a marinade for chicken breasts before pan-frying.Add-ons• Add a pinch of salt to homemade yoghurt that you have previously hung and hang it again to make labneh – a Middle Eastern strained yoghurt. Hang overnight. Sprinkle with za’atar and serve with pitta breads.• Coconut yoghurt – add coconut milk powder (Available from healthstores and online) when heating the milk.   • How To Make Vegetable Stock - Kitchen Essentials | Wild Dish

    Laoise Casey takes us through how to make a vegetable stock perfect for every roast.SUBSCRIBE: http://bit.ly/SubWildDish2 onions, unpeeled1 leek (use the green part also)2 carrots2 stalks celery½ bulb fennel10 button mushrooms3 tbsp. vegetable oil1 tsp. tomato paste1 clove garlic5 parsley stalks1 tsp. black peppercorns1 bay leafFew sprigs fresh thyme2.5 litres cold waterEquipmentBoardKnifeSaucepanLarge narrow saucepanWooden spoonLadleMethodRoughly slice all the vegetables to the same size. Heat the oil in a large saucepan and add the vegetables and brown over a medium heat. Add the mushrooms towards the end of the cooking as they will cook quickly. When the vegetables are nicely browned add the tomato paste and cook until it caramelises to a red/brown colour (3 – 4 minutes). Transfer to a narrow saucepan if you have one. Add the rest of the ingredients. Cover with cold water and stir. Bring to the boil and simmer for between 30 minutes – 1 hour. Skim with a a ladle if needed. Strain and reduce to the required consistency/taste. Season.Top tipsAvoid using starchy vegetables e.g. potatoes as they will make your stock cloudy. Dice all vegetables uniformly so they cook evenly. Don’t overcrowd the pan when browning the vegetables or they will sweat instead. Keep in the fridge for up to one week or freeze on the day you make it. Try freezing it in an ice cube tray so you can defrost one cube as required. Get rid of any burnt vegetables before adding the water – they will make your stock taste burnt.
