Frying Veggies In Olive Oil Is A Bad Idea. Here's How To Tweak It To Make It Better

If you're sautéing vegetables for heart-healthy reasons, olive oil may not be your best choice. Mother Nature Network reports that while olive oil has many health benefits, it's not a good idea to fry or saute with it. Olive oil's lower 'smoke point' means you'll be left with burnt, blackened, icky food! Here's a hack: blanch the veggies first. When you throw them in hot oil, some water from the blanching will still be on the vegetables.
