Cookery Techniques from L'atelier des Chefs.
Follow this method to prepare chicken or fish for grilling or frying. You will need three bowls/containers. Place seasoned flour in the first, beaten egg in the second and breadcrumbs in the third. Dip the chicken or fish first into the flour then into the beaten egg and finally the breadcrumbs. Make sure the chicken/fish is well coated at each stage, gently shaking off any excess. Grill or fry until cooked through and the coating is crisp and golden brown.
